I don't change my diet once a week, not even once a day... I literally change it by the meal- as in daily! I frikken love good healthy food so tonight I opted for a vegetarian, low-carb pasta.
I'm no cook; my husband can vouch for that, but I was feeling creative tonight and it turned out amazing!
You will need the following (Serves 2):
6 large zucchini's
3 small green onions (Chopped Finely)
2 small green chilies (Chopped Finely)
1/2 tsp crushed garlic
1/2 tsp lemon zest
squeeze of fresh lemon
1 cup baby tomatoes
2 Tbls basil pesto
basil leaves
1/2 an avo
1tsp butter
A small stick of cucumber
Parmesan cheese
For the sauce:
Fry the chopped onions, garlic and lemon zest in the butter. Then add the baby tomatoes.
Fry until the baby tomatoes split open slightly. Put that mix into a bowl to cool.
Then slice the zucchini into thin spaghetti type strips- if you have that shredder thing, lucky you- I had to put a lot of love into this...
Then flash fry the zucchini in a hot spray and cooked pan. You have to let it cook enough to loose that veggie-raw-zucchini taste but not too much that it starts to go brown... keep tasting, you'll know when its done. Add a squeeze of lemon while cooking.
Then add the sauce and the noodles together.
Mix in about 1/2 cup of chopped cucumber, 1 Tbsp grated Parmesan cheese, 1/2 avo and fresh basil leaves.
Only 1000kj per serving.
